We spent a good part of our morning today at Kitchen Garden, an organic cafe serving fresh salads, smoothies, sandwiches and more, right here in Mumbai. Starting with a fresh seasonal Mango Smoothie called YELLOW, the chefs at the cafe were generous enough to create a custom salad for us, which we called the No-Mad Salad. A healthy mix of leaves, grains and protein, we’d love to go back to Kitchen Garden for this fresh salad, perfect for the hot Indian summer.
INGREDIENTS (Serves 2)
120g organic barley
50g raw organic baby spinach
60g roasted organic beets
1 local artisan burrata
30g spicy nuts and seeds
40 ml Extra virgin olive oil, lime & cilantro dressing
Roast for 35 to 40 minutes at 200 degrees.
150 g nuts of your choice (cashew, almonds, macadamia…)
50 g seeds of your choice (pumpkin, sunflower…)
1 tbsp oil
1 tbsp honey
1 tsp black pepper
1 tsp cayenne pepper
salt to taste
> Roast for 15-17 minutes at 170 degrees until the nuts turn dark brown
100g extra virgin olive oil
25g lime juice
1/2 tsp mustard
Blend all the ingredients until smooth
Mix all the ingredients in a large Salad bowl.
Add the Lemon/Cilantro dressing and toss.
Garnish with Pomegranate and top it with Burrata.
Serve fresh with Sourdough bread.
