INGREDIENTS ( Serves 2)
2 cups fresh baby spinach
2 cups coconut water
2 cups pineapple
¼ cup fresh mint leaves for garnishing
Juice of 1 lime
1. Blend spinach and coconut water until smooth.
2. Add remaining ingredients, and blend until smooth.
3. Serve in glass topped with some fresh mint leaves.
